- 4 tbsp unsalted butter
- 8 brown onions
- 2 tsp salt and ground pepper
- 2 tsp fresh thyme
- 50ml brandy (white wine, cider can be used)
- 100ml beef stock
- 75g gruyere, grated
- handful of chives, finely chopped
- 1 egg (for egg wash)
