• 6 Potatoes (Russet or Idaho), boiled/peeled/cubed
• 2 stalks Celery, chopped
• 1/4 C. Green Pepper, chopped
• 1/4 C. Yellow Onion, chopped
• 4 Hard-boiled eggs, peeled/chopped
• 1 C. Mayonnaise (Hellmann or Blue Label)
• 1/4 C. Sweet Pickle Relish
• 3 tsp. prepared Mustard
• 1 tsp. dried Parsley flakes
• 1 tsp. Tony Chachere's Creole Original seasoning
• Salt and Black Pepper to taste
