Meatloaf Cupcakes - Cupcake Fanatic

Ingredients

• 2 Tbsp lard
• 1/2 C diced onion
• 1/2 C diced mushroom
• 1/2 C diced celery
• 1/2 C diced carrot
• 2 lbs 75/25 ground beef
• 1 lb. ground pork
• 2 eggs
• 1/2 C almond or coconut or other flour
• 1 Tbsp sea salt
• 2 tsp Italian seasoning
• 1/2 tsp paprika
• 1/2 tsp oregano
• 1/2 tsp ground black pepper
