Oven Baked Mushroom Risotto -

Ingredients

• 500gm Mixed Mushrooms - I use Swiss Brown, Oyster and Shitake
• 10gm Dried Porcini
• 1ltr good quality Vegetable Stock - can be substituted for Chicken Stock
• Small bunch of fresh Thyme
• 1 large Brown Onion - finely diced
• 2 cloves Garlic - finely chopped
• 250ml Dry White Wine
• 1 1/2 cups of Arborio rice
• 2 tbs Butter
• Olive Oil
• Salt and Pepper
