Creamy Paprika Mushroom Stroganoff - Rest Less

Ingredients

• 200g mixed wild mushrooms, cut into bite size pieces (I used Sainsbury’s Taste The Difference)
• Rapeseed oil
• 1/2 red onion, finely sliced
• 1 garlic clove, finely chopped
• 1 tbsp tomato purée
• 1/2 tsp paprika
• 1/4 tsp mild chilli powder
• 1 tbsp brandy
• 100ml vegetable stock
• 100ml pouring cream (I use Elmlea double light)
• Fresh chopped parsley
