Cheesy Zucchini and Squash Bake with Bacon and Tomato

Ingredients

• 2 medium zucchini, sliced into 1/4 inch rounds
• 2 medium yellow squash, sliced into 1/4 inch rounds
• 1 teaspoon kosher salt, divided
• 2 medium tomatoes, seeded and chopped
• 1/2 medium white onion, thinly sliced
• 1 tablespoon olive oil
• 1 teaspoon garlic powder
• 1 teaspoon dried oregano
• 1/2 teaspoon black pepper
• 6 slices bacon, cooked crisp and crumbled
• 1 1/2 cups (170 g) sharp cheddar cheese, freshly shredded
• 1/3 cup (35 g) grated parmesan cheese
• 2 tablespoons (28 g) unsalted butter, melted
