Ingredients

• 2 medium purple/black eggplants, with fewer seeds
• 4-5 unpeeled potatoes, sliced into ¼” thick slices and steamed
• ⅛ tsp unrefined salt
• 1 tomato, thinly sliced, to garnish
• 1 tbsp chopped fresh parsley, to garnish
• ¼ cup white sauce, to garnish
