- 3-4 courgettes finely sliced using a mandoline, if you have one
- 3 garlic cloves finely sliced
- ½ tsp chilli flakes
- 35g panko breadcrumbs
- 1 lemon zested and juiced

- 40g parmesan or vegetarian alternative, finely grated
