• 2 medium sweet potatoes, peeled, cubed
• 3 cups whole wheat penne pasta
• 2 Tbsp unsalted butter
• 2 Tbsp enriched all-purpose flour
• 1 clove garlic
• 2 1/2 cups 2% milk
• 1/4 tsp salt
• 1/4 tsp black pepper
• 3/4 cup shredded mozzarella cheese
• 3/4 cup shredded asiago cheese
• 3/4 cup grated parmesan cheese
• 2 cups spinach
