This traditional French salad is so simple and yet never fails to deliver. You can mix up the greens as you please — we often add thinly sliced fennel, rocket, baby cos, and baby spinach too.

- 1 small head radicchio leaves separated, torn
- 2 small endive chopped
- 6 radishes thinly sliced
- 3 small just-ripe pears thinly sliced
- 1/2 cup walnuts chopped
- salt
- freshly ground black pepper
- 3 tbsp extra-virgin olive oil
- 1 tbsp red wine vinegar
- 1 tbsp water
- 1 tsp Dijon mustard
- 1/2 tsp honey or maple syrup
