Ingredients

• 5 bone in, skin on chicken thighs
• 1 tablespoon neutral oil (e.g. grape seed or avocado oil)
• 1 medium onion, chopped
• 1/3 cup honey
• 6-7 garlic cloves, chopped
• 3 tablespoons Dijon mustard
• 2 tablespoons whole grain mustard
• 3-4 sprigs fresh thyme
• 3/4 cup chicken stock, dry white wine, or water
• 5 tablespoons Kerrygold Unsalted Butter
• 1.5 lbs small red potatoes, halved
