Ingredients

• 1 ¾ cup plus 2 tablespoons all-purpose flour
• 1 teaspoon baking soda
• ½ teaspoon salt, plus extra for topping (optional)
• ½ cup Santini (formerly San Gimignano) Extra Virgin Olive Oil
• ¾ cup packed light brown sugar
• ¼ cup granulated sugar
• 1 large egg, at room temperature
• 1 large egg yolk, at room temperature
• 1 ½ teaspoons vanilla extract
• 1 cup roughly chopped dark chocolate (60-80% recommended, you can also use a mix of multiple chocolates here too)
