Mortadella Musubi – Volpi Foods

Ingredients

• 1 cup short- or medium-grain white sushi rice
• 2 tablespoons rice vinegar
• 1/2 tablespoon vegetable oil
• 3 large eggs, beaten
• kosher salt and freshly ground black pepper
• 4 slices Mortadella , 1/2-inch thick, trimmed to fit musubi mold
• ½ tablespoon oyster sauce
• ½ tablespoon soy sauce
• 1 tablespoon sugar
• 2 sheets (toasted) nori for sushi, halved lengthwise
• 4 teaspoons furikake (rice seasoning mix)
• 4 inches by 2 inches by 2-inch musubi mold
