- 5 pounds green garlic 1 pound sliced garlic 50 grams kosher salt
- 300 grams sliced garlic
- 100 grams distilled white vinegar 50 grams granulated sugar
- 300 grams grapeseed oil
- 300 grams thinly sliced garlic Granulated sugar
- Kosher salt
- 2 pounds Australian grassfed outside skirt, silverskin and fat removed 200 grams pineapple juice
- 150 grams beef garum 150 grams soy sauce 85 grams brown sugar 8 grams sesame oil
- 500 grams sake
- 150 grams sliced celery 120 grams fresh thyme 1 onion, sliced
- 1 head garlic, halved 20 grams kosher salt
- 10 grams toasted black peppercorns
- 10 grams soy sauce 8 grams sesame oil Ground white pepper Grapeseed oil
- Oil for frying
- 300 grams capers, drained and dried 300 grams grapeseed oil
- 45 grams butter
- 45 grams beef tallow
- 250 grams Carolina gold rice, rinsed and dried Kosher salt
- 2 tablespoons butter 1 tablespoon beef fat
- 3 grams ground black pepper
- 10 pieces flowering thyme, tips and leaves picked 5 sprigs rosemary, leaves picked
- 1 egg yolk Flaky salt
