Ingredients

• 8 dried guajillo chiles, stems and seeds removed
• 1 dried arbole chile, stems and seeds removed
• 1 tablespoon cumin seeds
• 1 tablespoon whole coriander seeds
• 5 cups beef stock
• 4 chipotle peppers in adobo sauce, chopped
• 2 tablespoons olive oil, more if needed
• 4 pounds boneless chuck roast, excess fat removed, cut into 1½-inch cubes
• 2 onions, chopped
• 2 jalapenos, seeded and chopped
• 6 garlic cloves, finely chopped
• 2 tablespoons apple cider vinegar
• 1 tablespoon dark brown sugar, packed
• 2 teaspoons smoked paprika
• 2 teaspoons oregano
• 1 teaspoon cinnamon
• ½ teaspoon cayenne
• Kosher salt
• 1½ ounce Mexican chocolate
• Cheddar cheese, for garnish
• Sliced jalapenos, for garnish (or sliced scallions)
