Ingredients

• 8 cups water
• 1/2 cup kosher salt
• 1 cup brown sugar
• 1/4 cup real maple syrup
• 1 onion, chopped
• 3 cloves garlic, smashed
• 1 pinch ground cloves
• 1/2 lemon, juice of
• 1 dash cayenne pepper
• 1 (2 lb) whole pheasants
• 2 tablespoons butter
