Ingredients

  • 2 carrots, finely diced
  • 1 sweet onion, finely diced
  • 3 celery stalks, finely diced

  • 3 quarts chicken stock
  • 4 slices rustic bread, crust removed and cubed
  • 1 lb. dry white beans, soaked overnight or using the quick-soak method below
  • 2 tbsp. neutral oil (grapeseed or peanut)
  • Kosher salt
  • Black pepper
  • Extra virgin olive oil
  • Croutons
  • Grated parmesan
