Ingredients

• 1 onion, chopped
• 2 garlic cloves, chopped
• 2 tbsp (30 ml) olive oil
• ½ tsp ground chipotle pepper
• ½ tsp ground cumin
• 6 cups (1.5 litre) chicken broth
• 1 can (14 oz/398 ml) diced tomatoes
• 1 ½ cups (225 g) frozen corn kernels, thawed
• 2 cups (340 g) cooked chicken, coarsely chopped
• Corn chips, crushed, to taste
• 2 green onions, thinly sliced
