Roasted Sweet Potato Pasta Recipe - JamaicanBikkle

Ingredients

• 16oz dry Penne Pasta
• 3lbs Sweet Potato (1lb small dice, 2lbs rough cut)
• 2 tbsp coconut oil
• ¼ cup vegetable oil
• 2tsp Turmeric powder
• 2cups coconut milk
• 6 plum tomatoes (cut in 4)
• 2 stalk scallion (cut thinly)
• 1 larger Red Onions (julienned)
• 1 sprig Thyme
• 3-4 cloves Garlic (chopped)
• 1/2lb String Beans (cut similar size as penne pasta)
• 2cups of vegetable stock
• Salt
• Black pepper
• Cilantro for garnish
