Zucchini Soup - Tracy Anderson

Ingredients

• 1 Tbsp olive oil
• 1 yellow onion, diced
• 4 thyme sprigs
• 5 garlic cloves, minced
• 6-7 zucchinis, large diced
• 4 cups vegetable stock
• 1 (15 oz) can cannellini beans, rinsed
• 1 tsp mustard
• Juice of 1 lemon
• Juice of 1 lime
• Salt and pepper to taste
• 1 tsp mustard seeds
