Zucchini Soup

Ingredients

• 1 ½ Lb zucchini, halved lengthwise and cut into half-moons
• 2 tsbp Sizzle
• 1 small yellow onion, sliced julienne
• 2 medium cloves garlic, thinly sliced
• 1 ½ cup low-sodium vegetable broth
• 1 cup water
• Kosher salt and freshly ground black pepper, to taste
• 3 tbsp of red wine or sherry vinegar
• 4 tsp Drizzle
