Ingredients

  • 1 ½ cups Uncooked Quinoa
  • 1 English Cucumber, finely chopped
  • 1 Red Pepper, finely chopped
  • 3 Scallions, finely chopped
  • 2 cups Mini Heirloom Tomatoes (leave whole or cut larger in half)
  • 1 Bunch Fresh Spinach(about 4-6 cups) sliced into ribbons
  • 1 cup Crumbled Greek Sheep's/Goat's Feta(optional)
  • 2 Large Cloves Garlic, minced
  • ½ cup Extra Virgin Cold Pressed Greek Olive Oil
  • ¼ cup Red Wine Vinegar(Raw and Unfiltered if possible
  • 1 ½ tsp Sea Salt
  • ½ tsp Coarse Dijon Mustard
  • 2 tbsp Fresh Oregano Leaves, finely minced
  • Black Pepper to taste
  • Zest of 1 Lemon(organic if possible)
  • 2 cups Tzatziki Sauce
