Johnson Estate Winery - Recipes - Apricot Almond Shortbread Cookies

Ingredients

• 1 cup softened butter (salted or unsalted)
• 1/2 cup white sugar (original recipe was 2/3 cup, but for pairing with ice wines, I reduce to 1/2 cup)
• 1/2 tsp almond extract
• 1 cup white flour
• 1 cup whole wheat flour (may use all white flour)
• 1/4 cup ground flax seeds (optional)
• 1/4 cup ground almonds (optional)
• 1/2 cup apricot jam (strawberry/raspberry jams pair well with red ice wine)
