Spicy Pumpkin, Pecan And Raisin Tea Bread — Belinda Jeffery

Ingredients

  • Makes 1 large loaf.
  • 1 cup (160g) organic spelt flour (or wholemeal flour)
  • 1 cup (220g) firmly-packed dark brown sugar
  • 1 teaspoon bicarbonate of soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger (or more if you like ginger)
  • 1/2 teaspoon freshly ground nutmeg
  • 1 cup (170g) raisins (chopped dates are terrific too)
  • 1 cup (140g) roasted pecans, roughly chopped
  • 1 1/2 cups grated pumpkin (butternut or Kent are good as they are so sweet)
  • 2 eggs
  • 1/3 cup (80ml) light olive oil
  • 1/2 cup (125ml) milk
  • 1 1/2 teaspoons vanilla extract
  • Pepitas (pumpkin seeds) or sliced pecans, for topping
