- 2 tbsp olive oil

- 1 kg sliced zucchini
- 1/2 kg sliced potatoes
- 300 gr “myzithra” cheese (try ricotta if you cannot find it)
- 1 cup fresh chopped spearmint
- 1 big tomato, grated
- 100 ml olive oil
- Salt, black pepper
