• 3 large egg yolks
• ½ cup dark rum
• 2 teaspoons vanilla extract
• 1 teaspoon almond extract
• 2½ cups cake flour, spooned into measuring cup and leveled-off (see note)
• 1 cup packed light brown sugar
• 1 cup granulated sugar
• 2 teaspoons baking powder
• ¾ teaspoon salt
• 2 sticks (1 cup) unsalted butter, softened
• 1 stick (½ cup) unsalted butter
• ¼ cup water
• ¼ cup plus 2 tablespoons dark rum
• Generous pinch of salt
