Ingredients

• 2 sheets of puff pastry 8x10 inch (20 x 25 cm)
• 1 egg
• 1/3 cup (75 mL) white wine
• 1/3 cup (75 mL) white wine vinegar
• 1/4 cup (60 mL) thinly sliced shallots
• 10 black peppercorns
• 10 coriander seeds
• 2 egg yolks
• 2 tbsp hollandaise reduction
• 3/4 cup clarified butter
• A pinch of salt
• 1/2 cup (125 mL) bacon, cut into ¼ inch (0.6 cm) pieces
• 1/4 cup shallots, diced
• 2 cups spinach
• 4 soft poached eggs
• 1/4 cup spinach, cut into matchsticks
