Fruit Cake recipe by Naseema Zulfi Khan

Ingredients

• 500 g Fruit cake mix
• 1 cup brown sugar (I used white and I added little extra sugar ¼ cup)
• 2 cups Water
• ¼ cup orange juice
• 250 g Butter
• 3 tablespoon oil
• 2 teaspoon mixed Robertson's spice ,(for baking)
• 1 teaspoon cinnamon powder
• 1 full teaspoon baking powder
• 1 teaspoon cream of tartar
• 4 eggs beaten (I beat yolks separately and whites seperately
• 2 teaspoon full vanilla essence
• 3 cups self raising flour
• (Or you mix normal 3 cups cake flour with
• ¾ teaspoon salt 4&½ teaspoon bicarbonate of soda)
• Add chopped pecans and red and green chopped glazed cherries
