Bacon-Wrapped Stuffed Pork Loin

Ingredients

• 3 to 3 ½ lbs pork loin
• ½ teaspoon salt
• ½ teaspoon ground black pepper
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 8 oz 250g Philadelphia cream cheese, softened (I used ¾ cup only)
• 1 small carrot (grated)
• 6 to 9 pcs thinly-sliced deli ham (enough to cover)
• 2 hard boiled eggs (cut in half lengthwise)
• ½ red bell pepper (sliced into thin strips)
• 1 large whole sweet pickle (quartered lengthwise)
• 1 375 g pack bacon ((I used low-sodium bacon))
