- 2 tbsp mayonnaise
- 2 spring onions – finely chopped
- 1/2 red pepper – deseeded and finely chopped
- 1tbsp fresh chives – finely chopped
- 1 small baguette – cut in half
- 1 tomato – sliced
- 40g cheddar cheese – grated
- A sprinkle of dried mixed herbs
