Recipe for Shaved Fennel and chickpea salad with pickled lemon dressing

Ingredients

• 2 large bulbs of fennel
• 1 jar of Burcol chickpeas
• ½ red onion, thinly sliced
• ½ cucumber, seeds removed and sliced
• 1 red chilli, thinly sliced (optional)
• ½ bunch fresh flat leaf parsley, stalks removed and finely chopped
• ½ bunch fresh dill, finely chopped
• 1 fat bulb of garlic, crushed
• 1 teaspoon Pickled Lemon Paste
• 1 tablespoon maple syrup
• 2 tablespoon white wine vinegar
• 5 tablespoons extra virgin olive oil
