Ingredients

• 6 red beets, peeled and cut into 1/4" thick slices
• 3 tablespoons olive oil for roasting the beets
• Kosher salt and pepper, for roasting
• 5 ounces fresh goat cheese, crumbled
• 5 ounces arugula
• 1/4 cup Marcona almonds, toasted
• 1/4 cup olive oil
• 1 tablespoon apple cider vinegar
• 1 teaspoon Dijon mustard
• 2 tablespoons shallot, minced
• 1 teaspoon honey
• Pinch of kosher salt
• Freshly ground black pepper
