Ingredients

• 1/2 cup of cornstarch
• 1/2 cup of confectioners’ sugar
• Canola oil
• 3 envelopes of unflavored gelatin such as Knox
• 2/3 cup + 1/3 cup of cold water divided
• 2 cups of sugar
• 1/2 cup of light corn syrup
• 3 large of egg whites at room temperature
• 1/4 teaspoon of salt
• 2 teaspoons of mint extract
• 6 drops of green food coloring (optional)
• 1 1/4 cups of dark chocolate chips
