Sucuk sausage pasta with Turkish tomato paste

Ingredients

• 1 red onion
• 5 button mushrooms
• 1/2 tsp garlic
• 1 tsp dried Italian herb mixture
• 1 1/2 tsp sugar
• 1 1/2 tbsp Turkish tomato paste
• 400 ml Pasta stock
• 250 g Curly fettuccine
• 2 pinches salt
• 2 dashes pepper
• 200 g Sucuk
• 3 pinches grated Parmesan cheese (for garnish)
• 1 tbsp olive oil
• 1 tsp Butter
• 5 leaves basil
• 400 ml canned diced tomatoes
