Zucchini Bread – Garden & Gun

Ingredients

• About 2 teaspoons shortening
• 2 small or one medium zucchini
• 1 1/2 cups all-purpose flour
• 1 teaspoon ground cinnamon
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• 1/4 teaspoon baking powder
• 1/4 teaspoon freshly grated nutmeg
• 1 egg, beaten
• 1 cup sugar
• 1/4 cup vegetable oil
• 2 teaspoons vanilla extract
• 1/2 cup pecans, toasted lightly and coarsely chopped
