Ingredients

• 1 tablespoon extra-virgin olive oil
• 1 cup onion, chopped
• 1 tablespoon garlic, minced
• 3 cups organic vegetable broth
• 2 cups water
• 1½ cups red potato, cubed
• ½ teaspoon freshly ground black pepper
• ¼ teaspoon kosher salt
• (optional) 1 teaspoon Italian seasoning
• 1½ cups broccoli florets, coarsely chopped
• 1 ⨯ 15 ounce can no-salt-added cannellini beans, rinsed and drained
• 6 tablespoons grated fresh Parmesan cheese
