Roasted Corn and Peach Salsa – Olive and Vyne

Ingredients

• 1 grilled/roasted corn on the cob
• 1 cup peaches, chopped
• 1 cup tomato diced
• 1/4 cup red onion, finely diced
• 1 small garlic clove, crushed & finely chopped
• 3 tablespoons fresh cilantro, roughly chopped
• ¼ cup Extra Virgin Olive Oil
• 1 tablespoon White Peach Balsamic Vinegar
• ½ teaspoon fine sea salt
• ½ teaspoon freshly ground pepper
• 1-2 TBS green onions, sliced thin for garnish
