Zesty Beef Barley Soup - Better Than Bouillon

Ingredients

• 1 tablespoon olive oil
• 1.5 pound beef chuck roast, thawed, trimmed and cut into 0.5-inch pieces
• .5 cup chopped yellow onion
• 1 large clove garlic, peeled and minced
• 1 quart water
• 1.5 tablespoon Better Than Bouillon Roasted Beef Base
• 2 carrots, peeled and thinly sliced into rounds
• 1 rib celery, peeled and thinly sliced
• 1 can (28-ounce) can petite diced tomatoes, undrained
• 2 cans (5.5-ounce) spicy tomato juice (may substitute with original)
• .5 cup medium barley
• 2 teaspoon dried basil leaves
• 1 tablespoon dried parsley leaves
• 1 teaspoon ground cumin
• .5 teaspoon kosher salt
• .5 teaspoon ground black pepper
• 1 bay leaf
