• 1 cup all-purpose flour
• 1/2 cup granulated sugar
• 1/2 cup unsalted butter, melted
• 1/2 cup coconut milk
• 1 tsp vanilla extract
• 1 tsp baking powder
• 1/4 tsp salt
• 2 eggs
• 4 scoops of vanilla ice cream (1 scoop per serving)
• Optional toppings: toasted coconut flakes, crushed nuts, or fresh fruit
