- 60g/2¼oz caster sugar
- 50g/1¾oz butter
- 3 tbsp double cream
- ½ tsp ground ginger
- ½ tsp ground cinnamon
- 175g/6oz plain flour , plus extra for dusting
- ½ tsp bicarbonate of soda
