• 1 small red onion, diced
• 1 jalapeño, seeded and chopped
• 1 tablespoon cumin
• 1 Lime, juiced
• 1 (8.5-ounce) box corn muffin mix
• ⅓ cup whole milk
• 1 large egg, lightly beaten
