Ingredients

• 1 ½ tsp dried thyme
• 1 ½ cups beef stock
• ½ cup red wine
• 2 bay leaves

• 6 potatoes, washed and peeled
• ½ cup milk
• 2 tbsp butter
• ¼ cup cheddar
• 1 tbsp fresh thyme leaves, to garnish
