Fettuccine with Mushrooms and Pancetta - Confessions of a Chocoholic

Ingredients

• 16 oz fettuccine
• 1/4 cup olive oil
• 6 oz chopped pancetta
• 1 lb mixed mushrooms, torn into bite-size pieces
• 2 garlic cloves, minced
• 1 teaspoon thyme leaves
• 1/2 cup chopped flat leaf parsley
• 1 cup cream
• 1/2 cup grated Parmesan cheese
• 1/4 cup chopped chives
• salt and pepper (and chili pepper flakes, optional) to taste
