• 2 lbs lamb shoulder (cut into 1-1/2" pieces)
• salt & pepper
• 2 tbsp vegetable oil (divided)
• 1 large onion
• 2 tbsp butter
• 2 tbsp flour
• 1 can Guiness beer
• 3 carrots (chopped into 3" pieces)
• 2 large potatoes (about 1.5 lbs)
• 4 cups beef broth
• 2 spriges thyme (or 1/2 teaspoon dried)
• ¼ cup parsley
