Ingredients

  • 8 whole herring, small trout, or bluefish, floundered (see note above)
  • Kosher salt
  • Ground white pepper
  • <sup>1</sup>⁄<sub>3</sub> cup Dijon mustard
  • 2 tbsp. minced dill
  • 2 tbsp. minced flat-leaf parsley
  • 8 tbsp. unsalted butter
  • 2 cups sugar
  • 2 <sup>1</sup>⁄<sub>2</sub> cups distilled white vinegar
  • 1 medium red onion, thinly sliced crosswise
  • 1 large carrot, thinly sliced crosswise
  • 10 whole allspice berries
  • 10 whole black peppercorns
  • 5 whole white peppercorns
  • 2 bay leaves
  • Boiled potatoes and rye toast, for serving
