Fried Herring in Pickling Liquor | Saveur
Chef Magnus Nilsson's traditional Scandinavian recipe for fried herring in a pickling liquor, typically served on boiled potatoes or rye toast.
Ingredients
- 8 whole herring, small trout, or bluefish, floundered (see note above)
- Kosher salt
- Ground white pepper
- <sup>1</sup>⁄<sub>3</sub> cup Dijon mustard
- 2 tbsp. minced dill
- 2 tbsp. minced flat-leaf parsley
- 8 tbsp. unsalted butter
- 2 cups sugar
- 2 <sup>1</sup>⁄<sub>2</sub> cups distilled white vinegar
- 1 medium red onion, thinly sliced crosswise
- 1 large carrot, thinly sliced crosswise
- 10 whole allspice berries
- 10 whole black peppercorns
- 5 whole white peppercorns
- 2 bay leaves
- Boiled potatoes and rye toast, for serving
