• 4 heads of roasted garlic
• 1 tablespoon chopped rosemary, plus several whole sprigs
• Salt and white pepper
• 6 tablespoons olive oil, in all
• 1 whole chicken, 3 to 3 1/2 pounds, cut in half, wish bone, breast bone and back bones removed
• 1 1/2 pounds new potatoes, quartered or halved if large
• 2 onions, peeled and quartered
• 3/4 cup dry white wine
• 1 1/2 cups dark chicken stock
• 4 tablespoons cold unsalted butter, cubed
