Ingredients

• 2 tbsp vegetable oil
• 6 cup beetroot, peeled and diced
• 1/4 cup unsalted butter, diced
• 1 onion, finely chopped
• 1 clove garlic, finely chopped
• risotto rice 1 1/2 cup
• 1/2 cup white wine
• 5 cup vegetable stock
• 1/3 cup parmesan, grated
• 15 sprigs dill, finely chopped
• 1 lemon
• to taste salt
