• 1 tbsp oil
• 2 spicy pork sausages, of choice, removed from casing and crumbled
• 1 small head of fennel, thinly sliced
• Salt and black pepper
• 1⁄4 tsp paprika
• 1⁄4 tsp chilli flakes
• 6 small pittas
• 2 tbsp harissa paste
• 4 tbsp tomato sauce
• 2 tbsp tomato pureé
• 100 g white cheddar, grated, or mozzarella
• 2 sprigs of fresh parsley, eaves picked and chopped
