• 1 1/2  pounds beef for stew, cut into 1-inch pieces
• 1/4 cup all purpose flour
• 2 tablespoons olive oil
• 1 pound small new potatoes&#160;<strong>or</strong> small red potatoes
• 2 cups baby cut carrots
• 2 &#160;medium onion, cut into wedges

• 2 tablespoons tomato paste

• 1/2 teaspoon dried thyme
