This lovely little dish of Salmon Teriyaki with Tempura Prawns and Stir Fried Chilli Broccolini is great as a mid-week or a weekend treat!

Ingredients

  • 2 x 150g salmon
  • 2 tbsp koji
  • 100ml mirin
  • 100ml sake
  • 25ml soy
  • 6 raw prawns, shell removed
  • 100g gluten free self raising flour
  • 125ml cider
  • 6 broccolini
  • Splash of vegetable oil
  • 1 tbsp, plus extra to serve, crispy shallot, garlic, chilli oil or alternatively garlic chilli dressing
  • Micro coriander
  • Red amaranth
  • Marinade the salmon in the koji for 1 hr.
  • To make the teriyaki, bring the mirin and sake to the boil and reduce by ½, then finish with the soy.
  • Wash and dry the salmon. Drizzle in vegetable oil and roast for 5-6 mins in the oven, then coat in the teriyaki sauce.
  • Whisk the flour and cider together to make the batter. Dip the prawns in the batter and deep fry for 1-2 mins, then drain.
  • Stir fry the broccolini in a splash of vegetable oil and garlic chilli dressing for 2-3 mins.
  • To serve, spoon the broccolini onto a plate, place the salmon on top and a prawn to the side. If desired, drizzle with more of the garlic chilli dressing.
